Stuffed Acorn Squash



Stuffed Acorn Squash

Ingredients:
  • 2 acorn squash, cut in half
  • EVOO
  • salt and pepper
  • 1 pound ground beef or turkey
  • 1/2 onion chopped
  • 1 Tbsp minced garlic
  • 1 8 oz can of tomato sauce
  • 1 8 oz can seasoned diced tomatoes
  • 1.2 cup Parmesan cheese


Directions:
  1. Preheat oven to 425 degrees
  2. Drizzle EVOO over cut side on acorn squash. Add a little salt and pepper. Place cut side down on baking sheet. Bake for 45 minutes
  3. Towards the end of the squash baking, in a large skillet over medium high heat brown ground beef.
  4. Add in chopped onion. Saute for about 5 minutes. 
  5. Stir in minced garlic, tomato sauce, and diced tomatoes. Bring to a bubble then reduce heat.
  6. Reduce oven to 350 degrees
  7. Remove squash from oven. Carefully flip squash over.
  8.  Divide the meat mixture into the four halves. 
  9. Sprinkle Parmesan over each half. 
  10. Bake for another 25 minutes.
  11. Serve.
  12. Enjoy!


Extra notes:
  • you could do part ground beef part sausage mixture
  • if using less acorn squash, make meatballs with the rest of meat.
