Mini Pancake Muffins

Pancakes are a favorite in our house. Every Sunday morning we have pancakes with sausage or bacon and French press coffee. Having freshly made pancakes isn't always an option during the school year with crazy busy mornings. I have started making and freezing these Mini Pancake Muffins to prepare for those crazy mornings once back to school starts.




Mini Pancake Muffins

Ingredients:
pancake mix of your choice (we use Kodiak protein pancakes)
toppings of your choice ( we had blueberries, banana's and mini chocolate chips on hand)
syrup if desired

Directions:
1- Preheat oven to 400 degrees.
2- In a mixing bowl combine pancake mix per box directions.
3- Spray mini muffin pan with EVOO.
4- Fill each mini muffin about 2/3 full. Add desired toppings. 
5- Bake 10-12 minutes
6- Cool slightly and serve with syrup or
7- Cool completely place in freezer bags and store in freezer.
8- Enjoy!!

* 1 cup makes 24 mini pancake muffins
** if freezing, reheat wrapped in paper towel in microwave, 3 mini pancake muffins for 25 seconds
