Broccoli Mushroom Chicken Stir Fry
Ingredients:
- 1 lb boneless skinless chicken breast, cut into bite size pieces
- 1/4 cup flour
- 1 cup chicken broth
- 1/4 cup honey
- 1/4 cup liquid aminos
- 1 tsp ginger
- 2 tsp minced garlic
- 2 Tbsp EVOO
- 1 head of broccoli (more if you like)
- 1 small onion diced
- 6 small mushrooms sliced (more if you like)
- Brown rice (Optional, cooked per directions on box)
Directions:
1- Heat skillet to medium heat. Add EVOO
2- In a medium bowl toss chicken with flour. Remove chicken from bowl and add to hot skillet. Spread out evenly. Let cook for 5 minutes before stirring.
3- With remaining flour make sauce- combine chicken broth, honey, soy sauce, ginger, and garlic. Stir unless smooth. Set aside.
4- Once chicken is brown, remove from skillet and set aside.
5- Add broccoli, onion, and mushrooms to hot skillet. Cook until broccoli is tender.
6- Add chicken back to skillet.
7- Stir in sauce, bring to a boil, simmer until sauce thickens.
8- Serve.
9- Enjoy!
