Oatmeal Banana Mini Muffins
Ingredients:
- 2 ripe bananas
- ½ cup brown sugar
- 1 egg
- 4 Tbsp unsweetened applesauce
- 1 tsp vanilla extract
- 1 cup oats
- 1 cup flour
- 1 tsp cinnamon
- 1 tsp baking powder
- 1 tsp baking soda
- ½ tsp salt
Directions:
- Preheat oven to 400 degrees. Spray mini muffin pans with cooking spray.
- Add bananas into mixing bowl, mix until smooth.
- Add rest of the ingredients. Slowly combine with mixer.
- Spoon batter into mini muffin pan. Filling only 3/4 of the way.
- Bake for 15 to 20 minutes until top is golden brown.
- Allow to cool completely.
- Serve.
- Enjoy.
