Crock Pot Mongolian Chicken Thighs
Ingredients:
- 6 boneless skinless chicken thighs
- 1/2 onion diced
- 1/4 cup light soy sauce
- 1/2 cup brown sugar
- 1/2 tsp ground ginger
- 2 TBSP minced garlic
- salt and pepper to taste
Directions:
- Add chicken thighs and onion to crock pot.
- Add remaining ingredients
- Place lid on crock pot. Cook on low for 6-8 hours.
- Remove from chicken from crock pot and place in bowl of stand mixer. Shred chicken. (this is optional you can also serve chicken whole instead of shredding)
- Serve as desired. We had over rice with steamed veggies. We also spooned leftover sauce to rice for flavor.
