Who doesn't love the comfort feeling you get after eating a roast. My mom always made it is the crock pot and I have followed in the tradition but switched up spices and veggies.
Crockpot Roast with Sweet Potatoes
Ingredients:
- 2-3 lb beef roast carrots
- 1 small bag baby carrots
- 4 medium sweet potatoes cubed
- 2 tbsp minced garlic
- 1 large onion, diced
- 1/2 cup red wine
- 1/2 cup beef broth
- 1/2 Tbsp basil
- salt and pepper to taste
Directions:
- Place roast in crock pot. Add all veggies, beef broth, wine, and seasoning.
- Cook on low for 7 hours.
- Remove roast, shred if desired. Place back in juiced for 20 minutes.
- Serve.
- Enjoy.
