Pumpkin Swirl Zucchini Muffins
Ingredients:
- 1 cup zucchini finely shredded
- 2 eggs
- 1/2 cup applesauce
- 1/2 plain Greek yogurt
- 1 tsp vanilla extract
- 1 1/2 cups flour
- 3/4 cup sugar
- 1 tsp baking powder
- 1/2 tsp salt
- 1/4 tsp cinnamon
- 1/4 tsp nutmeg
- 1/4 tsp cloves
Swirl
- 1/2 cup sugar
- 1 Tbsp pumpkin spice
Directions:
- Preheat oven to 350 degrees. Spray mini muffins tins with EVOO or baking spray
- In a large mixing bowl combine zucchini, eggs, yogurt, and vanilla.
- Slowly add in flour, sugar, baking powder, salt, nutmeg, and cloves. Do NOT overmix.
- In a small bowl combine sugar and pumpkin spice.
- Pour batter in mini muffin tins.
- Add a little bit of the swirl mixture. Using a toothpick to swirl around.
- Bake for 15 to 20 minutes. Until toothpick is inserted and comes out dry.
- Serve
