 Pumpkin Swirl Zucchini Muffins


Ingredients:

  • 1 cup zucchini finely shredded
  • 2 eggs
  • 1/2 cup applesauce
  • 1/2 plain Greek yogurt
  • 1 tsp vanilla extract
  • 1 1/2 cups flour
  • 3/4 cup sugar
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/4 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 tsp cloves
Swirl
  • 1/2 cup sugar
  • 1 Tbsp pumpkin spice


Directions:

  1. Preheat oven to 350 degrees. Spray mini muffins tins with EVOO or baking spray
  2. In a large mixing bowl combine zucchini, eggs, yogurt, and vanilla. 
  3. Slowly add in flour, sugar, baking powder, salt, nutmeg, and cloves. Do NOT overmix.
  4. In a small bowl combine sugar and pumpkin spice. 
  5. Pour batter in mini muffin tins.
  6. Add a little bit of the swirl mixture. Using a toothpick to swirl around.
  7. Bake for 15 to 20 minutes. Until toothpick is inserted and comes out dry.
  8. Serve
