Smashed Red Potatoes
Ingredients:
- 1 lb baby red skin potatoes
- 2 Tbsp butter, melted
- 2 Tbsp minced garlic
- 2 tsp Italian seasoning
- salt/pepper
Directions:
- Preheat oven to 450 degrees. Preparing baking sheet with foil or EVOO
- In a large pot of boiling water, cook potatoes until fork tender.
- Remove potatoes from water and place on baking sheet. With either a fork or potato masher, smash potatoes
- Drizzle each potato with butter and seasoning.
- Bake for 20-25 minutes
- Serve
