Ingredients:
- 2 boneless skinless chicken breasts, diced
- 1 tsp Italian Seasoning
- Salt/Pepper, to taste
- 2 1/4 cups chicken broth
- 12 oz bag of cauli rice
- 2 cups fresh broccoli florets, uncooked
- 8 oz cream cheese softened
- 1/2 cup chicken broth
- ½ cup Greek yogurt
- 2 cups shredded cheddar cheese,
Directions:
- Preheat oven to 350
- In a large bowl combine cream cheese, Greek yogurt, cauli rice, spices and mix well.
- Add the chicken, onion, broccoli, 3/4 of the cheddar cheese, broth, and mix well.
- Dump into a 9x13 baking dish, sprinkle remaining cheese on top
- Bake for 40 to 45 minutes.
- Let sit for 10 minutes.
- Cut and Serve
