Crockpot Chicken Rice Soup
Ingredients:
- 1 lb boneless skinless chicken breast
- 1/2 onion, diced
- 12 oz bag frozen mixed veggies (corn, peas, carrots)
- 3 stalked of celery diced
- 8 cups chicken broth
- 2 tsp minced garlic
- 1 tsp thyme
- 1 tsp parsley
- salt/pepper
- 12 oz bag of cauliflower rice, frozen
Directions:
- Add all ingredientss to crockpot.
- Cook on low for 6 to 8 hours
- Remove chicken from crockpot. shred or dice chicken. Place back in crockpot and cook for an addition 15 to 30 minutes
- Serve
- Enjoy
