Crockpot Chicken Rice Soup

Ingredients:
  • 1 lb boneless skinless chicken breast
  • 1/2 onion, diced
  • 12 oz bag frozen mixed veggies (corn, peas, carrots)
  • 3 stalked of celery diced
  • 8 cups chicken broth
  • 2 tsp minced garlic
  • 1 tsp thyme
  • 1 tsp parsley
  • salt/pepper
  • 12 oz bag of cauliflower rice, frozen

Directions:
  1. Add all ingredientss to crockpot. 
  2. Cook on low for 6 to 8 hours
  3. Remove chicken from crockpot. shred or dice chicken. Place back in crockpot and cook for an addition 15 to 30 minutes
  4. Serve
  5. Enjoy
