Make Ahead Breakfast Burritos
Ingredients:
- 1 lb ground sausage
- 1 onion, diced
- 2 peppers, diced (I used green and yellow)
- 12 eggs
- 1 cup shredded cheddar cheese
- 10, 8 inch tortillas
Directions:
- In a large skillet, brown sausage. Drain the fat.
- Add onion, and peppers.
- In a separate bowl whisk together eggs with a splash of milk or water. Add eggs to pan, cook until no longer runny.
- Add in cheese. Cook until melted.
- Set egg mixture aside and walk until cooled to assemble make ahead burritos
- Lie tortilla flat. Place 1/2 cup egg mixture in middle of tortilla.
- Tuck the outer edges of the tortilla in first and then using your thumbs, roll the bottom of the tortilla up and over the eggs and tucked edges. Roll and place the seam down and press the top down so the burrito stays put. Place two prepared tortillas in a small freezer zip lock bag.
- Continue until all tortilla and egg mixture is used up. Place rolled up burritos in freezer until ready to eat.
- When ready to eat remove one burrito. Microwave for 1-2 minutes.
- Serve
