Lemon Zucchini Bread


  • 1 ½ cups flour
  • ½ tsp baking soda
  • ¼ tsp baking powder
  • ¼ tsp salt
  • ¾ cup sugar
  • 1 cup finely shredded zucchini
  • ¼ cup vegetable oil
  • 1 egg
  • 2 Tbsp lemon juice
  • 2 Tbsp lemon zest


  • cup powdered sugar
  • Tbsp lemon juice


  1. Preheat oven to 350 degrees. Prepare a bread pan
  2. In a mixing bowl combine flour, baking soda, baking powder, and salt; set aside.
  3. In a different mixing bowl combine sugar, zucchini, vegetable oil, egg, lemon juice, and lemon zest. Stir to combine.
  4. Add dry ingredients to zucchini mixture; stir just until combined.
  5. Spoon batter into bread pan.
  6. Bake 50-55 minutes.
  7. Cool in pan on a wire rack 15 min, then remove from pan and cool completely.
  8. Once cool, combine ingredients for glaze and drizzle over bread.
