Instant Pot Shrimp Stir Fry
Ingredients:
- 1 tbsp EVOO
- 1 lb raw shrimp, thawed
- a bunch of raw veggies of your choice, I used a gallon size bag of mixed veggies
- 1/4 cup soy sauce
- 2 Tbsp minced garlic
- 1-3 Tbsp corn starch
Directions:
- Coat bottom of instant pot with EVOO
- Add shrimp, veggies, soy sauce, and garlic in Instant Pot. Make sure the vent is sealed position.
- Cook on manual for 1 minute. Do a quick release and open the lid.
- To thicken sauce, turn to saute and mix in cornstarch until at desired consistency.
- Serve with rice
- Enjoy
