Corn Chowder:
Ingredients:
- 1 carrot, diced
- 3 celery sticks, diced
- 1 medium onion, diced
- 3 cloves garlic, chopped
- 1 sweet pepper, diced
- 4 pieces thick bacon,
- 4-5 ears of corn with kernels separated from cob. Save the cob
- 1/4 cup flour
- 4 cups chicken stock
- 2 cups of whole milk
- 2 potatoes, diced
- 1 tablespoon butter
- Salt, pepper, paprika, cayenne pepper, cumin
- 2-3 sprigs of thyme
- 1 cup shredded cheddar cheese
- Chives
Directions:
- Crisp bacon in soup pot. Remove bacon and leave bacon grease at bottom of pot.
- Add in butter and veggies (minus the corn and potatoes) and garlic. Cook until veggies are softened.
- Add in chicken stock, potatoes, corn, and cobs, seasoning. Bring to boil and reduce heat. Simmer for 20 min
- Remove cobs, add in milk and cheese. Simmer for 20 min.
- Add in crisp bacon, top with chives
- Stir periodically while cooking.
- Serve
