Corn Chowder

 Corn Chowder:

  • 1 carrot, diced
  • 3 celery sticks, diced
  • 1 medium onion,  diced
  • 3 cloves garlic, chopped
  • 1 sweet pepper,  diced
  • 4 pieces thick bacon, 
  • 4-5 ears of corn with kernels separated from cob. Save the cob
  • 1/4 cup flour
  • 4 cups chicken stock
  • 2 cups of whole milk
  • 2 potatoes, diced
  • 1 tablespoon butter
  • Salt, pepper, paprika, cayenne pepper, cumin
  • 2-3 sprigs of thyme
  • 1 cup shredded cheddar cheese
  • Chives

  1. Crisp bacon in soup pot. Remove bacon and leave bacon grease at bottom of pot.
  2. Add in butter and veggies (minus the corn and potatoes) and garlic. Cook until veggies are softened.
  3.  Add in chicken stock, potatoes,  corn, and cobs, seasoning. Bring to boil and reduce heat. Simmer for 20 min
  4. Remove cobs, add in milk and cheese. Simmer for 20 min.
  5. Add in crisp bacon, top with chives
  6. Stir periodically while cooking.
  7. Serve
  8. Enjoy!!!
