 Creamy Chicken Soup

Ingredients:

  • 1 Tbsp EVOO
  • 2 Tbsp garlic, minced
  • 1 onion, diced
  • 2 large carrots, diced
  • 2 celery stalks, diced
  • 2 medium red skin potatoes, diced
  • 1/4 cup flour
  • 1/2 tsp oregano
  • salt/pepper
  • 32 oz chicken stock ( you could do half stock half water)
  • 1 cup heavy cream
  • 4 cups macaroni, cooked (you could also use noodles)

Directions

  1. In a large pot over medium high heat, drizzle EVOO.
  2. Add garlic and saute for 1 minute.
  3. Add onion and saute for another minute.
  4. Add carrots and celery, saute for 5 minutes until veggies are softened. 
  5. Add potatoes and cook for 3 minutes.
  6. Add flour, oregano, salt, pepper. 
  7. Add chicken stock. Turn heat up to high and bring soup to a boil. Boil for 3-5 minutes.
  8. Turn heat down to low, cover and simmer for 20-25 minutes until potatoes are softened.
  9. Add chicken, and heavy cream. Cook for 10-15 minutes until sauce thickens.
  10. Stir in cooked macaroni.
  11. Taste test, add more seasoning if needed.
  12. Serve
