Pepper Chicken Taco Nachos
Ingredients:
- 1/4 medium onion, chopped
- 1 Tbsp EVOO
- 1 lb shredded chicken, cooked
- 1 Tbsp taco seasoning
- 1/4 cup water
- 2 medium peppers. sliced
- 1/4 cup cheddar cheese shredded
- optional toppings (Salsa, sour cream, guacamole)
Directions:
- Preheat oven to 375 degrees
- Spray a baking dish light with EVOO
- In a large skillet over medium heat, add EVOO and onion. Cook until translucent.
- Add chicken, cook until reheated.
- Add taco seasoning and water. Stirring frequently for 2 minutes or until water is evaporated.
- Lay sliced peppers in bottom of baking dish. Top with chicken mixture.
- Top with shredded cheese.
- Bake for 5-7 minutes until cheese is melted.
- Add additional optional toppings.
- Serve
