 Pepper Chicken Taco Nachos


  • 1/4 medium onion, chopped
  • 1 Tbsp EVOO
  • 1 lb shredded chicken, cooked
  • 1 Tbsp taco seasoning
  • 1/4 cup water
  • 2 medium peppers. sliced
  • 1/4 cup cheddar cheese shredded
  • optional toppings (Salsa, sour cream, guacamole)


  1. Preheat oven to 375 degrees
  2. Spray a baking dish light with EVOO 
  3. In a large skillet over medium heat, add EVOO and onion. Cook until translucent.
  4. Add chicken, cook until reheated. 
  5. Add taco seasoning and water. Stirring frequently for 2 minutes or until water is evaporated.
  6. Lay sliced peppers in bottom of baking dish. Top with chicken mixture. 
  7. Top with shredded cheese.
  8. Bake for 5-7 minutes until cheese is melted.
  9. Add additional optional toppings.
  10. Serve
  11. Enjoy!!!!
