Crockpot Creamy Chicken Tortilla Soup
Ingredients:
- 1 lb boneless skinless chicken breasts
- 1 onion, diced
- 1 pepper, diced
- 1 can whole kernal corn, drained and rinsed
- 1 can black beans, drained and rinsed
- 1 can garbanzo beans, drained and rinsed
- 1 can pinto beans, drained and rinsed
- 1 can diced tomatoes, do not drain
- 1 Tbsp garlic, minced
- 4 cups chicken stock
- 1 bay leaf
- 1/2 Tbsp chili powder
- 1/2 Tbsp cumin
- 1 tsp paprika
- 1/2 tsp cayenne pepper
- 3/4 cup plain Greek yogurt
- 1/2 cup cheddar, shredded
Directions:
- Add all ingredients to crockpot except the Greek yogurt and cheese.
- Cook on low for 6 hours or high for 3 hours.
- Remove chicken from crockpot and shred. Return to crockpot.
- Stir in Greek yogurt.
- Stir in cheese,
- Cook on low for 30 more minutes.
- Serve
