 Crockpot Creamy Chicken Tortilla Soup

Ingredients:
  • 1 lb boneless skinless chicken breasts
  • 1 onion, diced
  • 1 pepper, diced
  • 1 can whole kernal corn, drained and rinsed
  • 1 can black beans, drained and rinsed
  • 1 can garbanzo beans, drained and rinsed
  • 1 can pinto beans, drained and rinsed
  • 1 can diced tomatoes, do not drain
  • 1 Tbsp garlic, minced
  • 4 cups chicken stock
  • 1 bay leaf
  • 1/2 Tbsp chili powder
  • 1/2 Tbsp cumin
  • 1 tsp paprika
  • 1/2 tsp cayenne pepper
  • 3/4 cup plain Greek yogurt
  • 1/2 cup cheddar, shredded
Directions:
  1. Add all ingredients to crockpot except the Greek yogurt and cheese.
  2. Cook on low for 6 hours or high for 3 hours.
  3. Remove chicken from crockpot and shred. Return to crockpot.
  4. Stir in Greek yogurt. 
  5. Stir in cheese,
  6. Cook on low for 30 more minutes.
  7. Serve
  8. Enjoy!!!
