Sausage Stuffed Acorn Squash


  • 1 acorn squash cut in half
  • 2 Tbsp EVOO
  • salt / pepper
  • 1 lb ground Italian sausage
  • 1/2 container sliced mushrooms
  • 1 onion, diced
  • 1 medium apple, diced
  • salt/pepper
  • 1 Tbsp minced garlic
  • 1/4 cup shredded parmesan


  1. Preheat oven to 400 degrees. Prepare a baking dish by spraying lightly with EVOO
  2. Slice acorn squash length wise, remove seeds. Place cut side up in baking dish. Brush each side with EVOO, top with salt and pepper.
  3. Bake for 40 minutes.
  4. While the squash baking, in a large skillet brown sausage. 
  5. Add mushrooms, onion, apple, garlic, and salt/pepper to skillet. Cook until softened.
  6. Scoop sausage mixture into center of squash. Top with parmesan 
  7. Place until broiler until cheese is melted.
  8. Serve
  9. Enjoy!!!!

* there is a lot more stuffing that  won't fit in the squash. My kids don't each the squash but will eating the stuffing. Also works great for leftovers, on a sandwich, etc.
