Zucchini Sausage Soup

 Zucchini Sausage Soup


  • 1 Tbsp EVOO
  • 1 lb Italian sweet sausage, remove the casing
  • 3 celery stalks, diced
  • 1 medium onion, diced
  • 1 pepper diced (I did half red, half green)
  • 1 Tbsp minced garlic
  • 1 tsp red pepper flakes
  • 1/4 cup tomato paste
  • 2 medium zucchinis, cut into bite sized 
  • 2 cans diced tomatoes 
  • salt/pepper
  • 2 quarts of low sodium chicken broth
  • 1 cup grated Parmesan cheese
  • 1 Tbsp basil


  1. In a large pot, heat EVOO to medium heat. Add sausage meat and cook, while cooking break up, done when until no longer pink. 
  2. Add onion, celery and peppers. cook for 4 - 5 minutes until softened
  3. Make space in the middle of the pan, add garlic, pepper flakes, and tomato paste. Cook for 2 minutes. Stir everything together. 
  4. Stir in tomatoes, zucchini, salt/pepper. chicken broth, parmesan, and basil. 
  5. Bring soup to a boil, then simmer for 15-20 minutes. 
  6. Serve
