 Granola Bars


  • EVOO spray
  • 1/2 cup plus 1 1/2 cups old fashioned rolled oats
  • 1 cup pecans
  • 1/2 cup packed brown sugar
  • 3 large egg whites (we used a carton and followed directions)
  • 1/3 cup vegetable oil
  • 1 Tbsp vanilla extract
  • 1/4 tsp salt
  • 1/4 tsp ground cinnamon
  • 1/8 tsp ground nutmeg
  • 1/2 cup dried mixed fruit
  • 1/2 cup raw pepitas
  • 1/2 cup unsweetened coconut flakes
  • 1/2 cup mini chocolate chips


  1. Preheat oven to 300 degrees. Prepare a 13x9 baking pan by lining with foil, leaving edges hanging over
  2. In a food processor, finely grind 1/2 cup oats. Add to a small bowl. 
  3. Add pecans into food processor. Finely chop then add to oats in the small bowl.
  4. In a large bowl, whisk sugar, egg whites, oil, vanilla, salt, cinnamon, and nutmeg until combined. Add oat mixture. Stir in 1 1/2 cup oats ,dried fruit, pepitas, coconut flake and chocolate chips. Stir until well combined.
  5. Dump into baking pan and spread evenly. Pressing down firmly. 
  6. Bake for 40 minutes. Do not turn off oven.
  7. Let cool for 15 minutes. Use foil overhand to transfer to cutting board. Cut lengthwise and crosswise into 16 bars total.
  8. Plan in baking sheet and for additional 15 minutes.
  9. Let cool for 1 hour. 
  10. Serve
