Summer Quinoa Salad
Ingredients:
- 1/2 cup cooked quinoa
- 1 can chick peas
- 2 Tbsp coconut aminos
- 1 Tbsp EVOO
- 1/2 medium cucumber, diced
- 1/2 red pepper, diced
- juice from one lemon
- salt/pepper to taste
Directions:
- Mix all together.
- Cover and place in fridge for 1 hour.
- Serve
- Enjoy!!!
