 Chicken Taco Salad


For Chicken:
  • 1 lb ground chicken
  • 1 Tbsp EVOO
  • 1 small onion, diced
  • 1 Tbsp garlic, minced
  • 2 Tbsp taco seasoning
For Salad:
  • romance lettuce, thinly chopped
  • cherry tomatoes, quartered
  • cheddar cheese
  • corn, cut off the cob
  • avocado, diced
  • black beans, drained and rinsed
  • dressing of your choice

  1. In a medium skillet heat EVOO over medium heat. 
  2. Add onion and saute until they are soft about 5 minutes.
  3. Add the garlic and saute about 30 seconds.
  4. Add ground chicken. Cook until fully cooked, breaking up as it cooks.
  5. Add in taco seasoning and 1/4 cup of water. Reduce heat to low and simmer for about 5 minutes.
  6. In a large serving bowl add all salad ingredients minus the dressing. Add cooked ground chicken.
  7. Toss until mixed evenly.
  8. Serve and top with dressing.
  9. Enjoy!!!!
