Peach Bourbon Salmon
Ingredients:
- 2 salmon fillets
- salt and pepper
glaze:
- 1 peaches, sliced thin
- pinch of salt
- shot of bourbon
- 2 Tbsp honey
Directions:
- In a small sauce pan, add sliced peaches, bourbon, honey, and salt. Cook down over medium heat.
- Preheat oven to 400 degrees. Cut two pieces of foil big enough to make a pocket around your salmon.
- Add salmon to middle of foil pockets. Season with salt and pepper. Drizzle peach glaze over both pieces of salmon. Seal the foil around salmon.
- Bake for 13 to 15 minutes. (internal temp should be 145 degrees)
- Serve
