• 1 eggplant
  • 1 zucchini
  • 1 yellow squash
  • 1 onion, diced
  • 2 tomatoes
  • 14.5 oz can tomato sauce
  • 2 Tbsp Italian Seasoning
  • salt/pepper
  • EVOO


  1. Preheat oven to 350 degrees.
  2. Chop all veggies 1/4 inch thick then in half again. Finally chop onion. I recommend cutting skin off the eggplant. 
  3. Add a drizzle of EVOO to bottom of baking dish. Pour half of tomato sauce into pan. Add veggies. Season with salt, pepper, and Italian seasoning.  Add rest of tomato sauce and stir.
  4. Bake for 45 minutes, or until veggies are softened.
  5. Serve
