Marry Me Chicken
Ingredients:
- EVOO
- 2 lbs chicken, boneless skinless
- salt/pepper
- 2 Tbsp garlic, minced
- 3/4 cup chicken broth
- 1/2 cup heavy cream
- 1/3 cup grated parmesan
- 1/2 cup sun dried tomatoes
- 1 tsp oregano
- 1/2 tsp crushed red pepper flake
Directions:
- Preheat oven to 375 degrees.
- Season chicken generously with salt and paper.
- Heat cast iron skillet over medium-high head. When skillet is warm add EVOO and swirl to coat entire surfance.
- Place chicken in skillet, searing both sides for 3 to 4 minutes. Transfer chicken to a plate and set aside. (chicken should not be fully cooked)
- Over medium low heat add minced garlic, cook for 1 to 2 minutes.
- Add broth to skillet, stirring and scarping the bottom of the pan.
- Whisk in heavy whipping cream until combined. Add in grated parmesan stirring until cheese is melted.
- Add sun dried tomatoes, dried oregano, and red pepper flakes. Adjust seasonings to taste.
- Bring sauce to a simmer, stirring occassionally.
- Returned chicken back to skillet. Coat chicken in sauce.
- Place entire skillet in oven.
- Bake for 12 to 15 minutes until chicken is cooked.
- Remove skillet from oven. Spoon sauce over chicken again. Let rest for 5 minutes.
- Serve.
