 Marry Me Chicken


  • EVOO
  • 2 lbs chicken, boneless skinless
  • salt/pepper
  • 2 Tbsp garlic, minced
  • 3/4 cup chicken broth
  • 1/2 cup heavy cream
  • 1/3 cup grated parmesan
  • 1/2 cup sun dried tomatoes
  • 1 tsp oregano
  • 1/2 tsp crushed red pepper flake


  1. Preheat oven to 375 degrees. 
  2. Season chicken generously with salt and paper. 
  3. Heat cast iron skillet over medium-high head. When skillet is warm add EVOO and swirl to coat entire surfance.
  4. Place chicken in skillet, searing both sides for 3 to 4 minutes. Transfer chicken to a plate and set aside. (chicken should not be fully cooked)
  5. Over medium low heat add minced garlic, cook for 1 to 2 minutes.
  6. Add broth to skillet, stirring and scarping the bottom of the pan. 
  7. Whisk in heavy whipping cream until combined. Add in grated parmesan stirring until cheese is melted. 
  8. Add sun dried tomatoes, dried oregano, and red pepper flakes. Adjust seasonings to taste. 
  9. Bring sauce to a simmer, stirring occassionally. 
  10. Returned chicken back to skillet. Coat chicken in sauce. 
  11. Place entire skillet in oven.
  12. Bake for 12 to 15 minutes until chicken is cooked. 
  13. Remove skillet from oven. Spoon sauce over chicken again. Let rest for 5 minutes. 
  14. Serve.
