 Tomato Basil Tortellini Soup


  • 10 baby carrots, diced
  • 1 onion, diced
  • 2 Tbsp minced garlic
  • 3 cans crushed or roma tomatoes (28 oz each)
  • 1 carton vegetable broth (32 oz)
  • 2 Tbsp basil
  • 1 Tbsp sugar
  • salt/pepper
  • 16oz cheese tortellini
  • 3/4 cup heavy cream


  1. Add carrots, onion, garlic, tomatoes, broth and seasoning to crock pot.
  2. Cook on low for 6 to 8 hours. 
  3. Puree with a immersion blender or a high powered blender. careful it is hot. 
  4. Stir in tortellini. Cook on high for 20 minutes
  5. Reduce heat to warm, stir in heavy cream. 
  6. Serve
  7. Enjoy!!!!!
- do NOT use a crock pot liner if using an immersion blender
