 White Lasagna Soup


  •  2 chicken breast, boneless skinless, bite size 
  • 1 onion, diced
  • 1 Tbsp garlic, minced
  • 2 tsp Italian seasoning
  • salt/pepper
  • 4 cups chicken broth
  • 1/4 cup sun dried tomatoes (optional)
  • 1/2 cup carrots (optional)
  • 2 cups pasta, I used chickpea pasta
  • 1 cup heavy cream
  • 3 Tbsp corn starch
  • 1 cup fresh spinach
  • 1/2 cup parmesan, grated

  1. In a large crockpot add chicken breast, onion, Italian seasoning, salt, pepper, chicken broth, sun dried tomatoes and carrots. Cook on low for 6 to 8 hours.
  2. In a bowl, mix together heavy cream and corn starch. 
  3. Add mixture, pasta, and spinach to crockpot. 
  4. Stir to make sure all pasta is covered.
  5. Cook until pasta is softened, about 20 minutes.
  6. Before serving stir in cheese. 
  7. Serve
