 Vegetable Beef Soup


  • 1 lb ground beef (can also use ground chicken or turkey)
  • 1 medium onion, diced
  • 1 Tbsp garlic, minced
  • 1 box vegetable broth (can also use beef or chicken)
  • 15 oz can diced tomatoes
  • 12 oz bag frozen mixed veggies,
  • 8 oz can tomato sauce
  • 1 tsp parsley
  • 1 tsp basley
  • 1 tsp oregano
  • salt/pepper 


  1. In a large dutch oven or stock pot, brown meat. Drain fat if needed.
  2. Add in onion and garlic, cook until onion is translucent.
  3. Stir in veggies.
  4. Stir in broth.
  5. Add seasoning. 
  6. Bring to a boil. Reduce heat and simmer for 45 minutes.
  7. Serve
  8. Enjoy!!!
