 Cheeseburger Potato Soup


Ingredients:

  • 1 lb ground beef
  • 4 Tbsp unsalted butter, divided
  • 1 onion, diced
  • 10 baby carrots, shredded
  • 1 celery stalk, shredded
  • 1 Tbsp Italian seasoning
  • 1 tsp salt
  • 1/2 tsp pepper
  • 3 large potatoes, peeled and diced
  • 4 cups beef broth
  • 1/4 cup flour
  • 4 cups cheddar cheesed, shredded
  • 1 1/2 cups milk
  • 1/4 cup plain Greek yogurt

Directions:

  1. In a large pot, brown ground beef. Cook until fully browned, breaking it while it cooks. Drain excess grease. Remove the meat and set aside.
  2. In pot add 1 tbsp of butter over medium heat. 
  3. Add onions, carrots, and celery. Saute until softened
  4. Add seasoning
  5. Add back in the ground beef, potatoes and beef broth. Bring to a boil. reduce heat, simmer for 10-12 minutes until potatoes have softened.
  6. In a small sauce pan. Melt remaining butter. Stir in flour to make a roux. Mix well to thicken.
  7. Stir roux into soup.
  8. Gradually stir in cheese continue stirring until fully melted in soup.
  9. Mix in milk and simmer. Stir in sour cream until combine
  10. Taste and adjust seasoning if needed
  11. Serve
