Cheeseburger Potato Soup
Ingredients:
- 1 lb ground beef
- 4 Tbsp unsalted butter, divided
- 1 onion, diced
- 10 baby carrots, shredded
- 1 celery stalk, shredded
- 1 Tbsp Italian seasoning
- 1 tsp salt
- 1/2 tsp pepper
- 3 large potatoes, peeled and diced
- 4 cups beef broth
- 1/4 cup flour
- 4 cups cheddar cheesed, shredded
- 1 1/2 cups milk
- 1/4 cup plain Greek yogurt
Directions:
- In a large pot, brown ground beef. Cook until fully browned, breaking it while it cooks. Drain excess grease. Remove the meat and set aside.
- In pot add 1 tbsp of butter over medium heat.
- Add onions, carrots, and celery. Saute until softened
- Add seasoning
- Add back in the ground beef, potatoes and beef broth. Bring to a boil. reduce heat, simmer for 10-12 minutes until potatoes have softened.
- In a small sauce pan. Melt remaining butter. Stir in flour to make a roux. Mix well to thicken.
- Stir roux into soup.
- Gradually stir in cheese continue stirring until fully melted in soup.
- Mix in milk and simmer. Stir in sour cream until combine
- Taste and adjust seasoning if needed
- Serve
