 Marry Me Chicken Soup


Ingredients:

  • 8 oz elbow pasta
  • EVOO
  • 1 lb boneless skinless chicken, diced
  • salt/pepper
  • 1 medium onion, diced
  • 2 Tbsp minced garlic
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1/2 cup sun dried tomatoes, julienned
  • 1/3 cup grated Parmesan cheese
  • 2 cups spinach leaves
  • 1 tsp Italian seasoning
  • salt/pepper to taste

Directions:

  1. Cook pasta per directions on package for ala dente. 
  2. In a large pot, drizzle EVOO. Add diced chicken. Season with salt and pepper, cook until no longer pick. Set aside.
  3. In the same pot, saute onion until translucent, 2-3 minutes.
  4. Add garlic, cook 30 seconds.
  5. Pour is chicken broth, scraping bottom of pot to scrap any bits. 
  6. Stir in heavy cream, sun dried tomatoes, and Parmesan cheese. Add Italian seasoing Simmer for 10 minutes
  7. Return chicken to pot, simmer for another 10 minutes.
  8. Stir in the spinach. Cook until wilted, about 2 minutes.
  9. Add in pasta.
  10. Adjust seasoning as desired.
  11. Serve
