 Turkey Kale Soup

Ingredients:

  • EVOO
  • 1 lb ground turkey
  • 2 Tbsp minced garlic
  • 10 baby carrots, diced
  • half package of baby bell mushrooms, diced
  • 1 Tbsp Italian seasoning
  • salt/pepper
  • 1 can white beans
  • 32 oz turkey broth

Directions:

  1. In a large pot over medium heat, drizzle EVOO and cook ground turkey until no longer brown.
  2. Add in minced garlic and cook for 30 seconds. 
  3. Add in carrots and mushrooms. Saute for 4 to 5 minutes.
  4. Season with salt, pepper, and Italian seasoning.
  5. Add half a can of white beans to a food processor. Blend until smooth. Add smooth beans to the pot. Add rest of beans from the can to the pot also. Stir
  6. Add 32 oz of turkey broth and stir. 
  7. Bring to a boil, then reduce to simmer for 15-20 minutes.
  8. Add chopped kale and cook an additional 5 minutes.
  9. Serve
  10. Enjoy!!!
