Turkey Kale Soup
Ingredients:
- EVOO
- 1 lb ground turkey
- 2 Tbsp minced garlic
- 10 baby carrots, diced
- half package of baby bell mushrooms, diced
- 1 Tbsp Italian seasoning
- salt/pepper
- 1 can white beans
- 32 oz turkey broth
Directions:
- In a large pot over medium heat, drizzle EVOO and cook ground turkey until no longer brown.
- Add in minced garlic and cook for 30 seconds.
- Add in carrots and mushrooms. Saute for 4 to 5 minutes.
- Season with salt, pepper, and Italian seasoning.
- Add half a can of white beans to a food processor. Blend until smooth. Add smooth beans to the pot. Add rest of beans from the can to the pot also. Stir
- Add 32 oz of turkey broth and stir.
- Bring to a boil, then reduce to simmer for 15-20 minutes.
- Add chopped kale and cook an additional 5 minutes.
- Serve
