Ground Beef Enchiladas


 Ground Beef Enchiladas

Ingredients:

  • 1 lb ground beef
  • 1/2 onion, diced
  • 1 Tbsp garlic, minced
  • 15oz can enchiladas sauce
  • 4 large tortillas
  • 15oz can black beans, drained and rinsed
  • 1 cup shredded cheddar cheese


Directions:  

  1. Preheat oven to 375 degrees. Drizzle a little enchiladas sauce on the bottom of an 8x8 baking dish.
  2. In a large skillet over medium heat, brown ground beef, breaking it up as it cooks. Cook until no longer pink. Drain any extra grease.
  3. Add diced onion and minced garlic, cook for 1 minute. 
  4. Stir in enchiladas sauce and black beans. Leave some sauce to pour over top at end. 
  5. Spoon 1/2 cup of mixture into the center of the tortilla. Roll tightly and place seam side down in a baking dish.
  6. Repeat with remaining tortillas
  7. Pour remaining enchiladas sauce over tortillas. Top with cheddar cheese
  8. Bake for 20 minutes
  9. Serve
