Ground Beef Enchiladas
Ingredients:
- 1 lb ground beef
- 1/2 onion, diced
- 1 Tbsp garlic, minced
- 15oz can enchiladas sauce
- 4 large tortillas
- 15oz can black beans, drained and rinsed
- 1 cup shredded cheddar cheese
Directions:
- Preheat oven to 375 degrees. Drizzle a little enchiladas sauce on the bottom of an 8x8 baking dish.
- In a large skillet over medium heat, brown ground beef, breaking it up as it cooks. Cook until no longer pink. Drain any extra grease.
- Add diced onion and minced garlic, cook for 1 minute.
- Stir in enchiladas sauce and black beans. Leave some sauce to pour over top at end.
- Spoon 1/2 cup of mixture into the center of the tortilla. Roll tightly and place seam side down in a baking dish.
- Repeat with remaining tortillas
- Pour remaining enchiladas sauce over tortillas. Top with cheddar cheese
- Bake for 20 minutes
- Serve
