Perfect Shredded BBQ Chicken

One of my favorite bloggers Shay over at Mix and Match Mama's just came out with a new cookbook. I pre-ordered Simmers on Amazon, and got it last week. It is all slow cooker meals which I love. They claim to be "creations your family will love", as she has a few kids of her own. I couldn't wait to start trying her recipes, plus tweaking them to make them my own. 


In her book she has a recipe for the Perfect Chicken which is the staple for most of her chicken meals. I decided to give it a try, but if you know me I had to tweak it. Yesterday was a rushed day with being out the door early to take my mom to the doctors, then after school Ella was scheduled to have cheerleading (it got canceled.) I threw the chicken in the slow cooker and ran out the door. When I was ready to finish dinner, I drained the water, shredded it up, and added the rest of the ingredients to make Shredded BBQ Chicken sandwiches and tossed sweet potato fries in the oven for the kids. The were so moist and flavorful. BOTH my kids ate the shredded chicken. This is going to be a new staple in our house. 


Perfect Shredded BBQ Chicken

Ingredients:
3 chicken breasts
2 cups chicken broth
2 cups vegetable broth
4-8 cups of water 

2 cups Sweet Baby Rays BBQ sauce (more if you like a rich bbq flavor)
1/2 Tbsp onion powder
1/2 Tbsp garlic powder
salt & pepper to taste

Directions:
1- Place uncooked chicken in bottom of slow cooker. Add chicken and veggie broth. Add just enough water to cover tops of chicken.
2- Put on lid and cook on low for 6 to 8 hours or high for 3 to 4 hours. 
3- Remove chicken from slow cooker and shred with 2 forks. Reserve 1-2 cups of water/broth from slow cooker and dump the rest.
4- Put chicken back into slow cooker (helps to keep warm) stir in 1 cup of reserved water/broth. 
5- Add BBQ sauce, onion powder, garlic powder, salt and pepper. Stir. 
6- Serve!
7- Enjoy!

We made the shredded BBQ chicken into sandwiches with a little ranch dressing, spinach, and pickles for Brian and I. Both my kids just ate it with a fork. Hope your family enjoys this recipe as much as our family does.
