One Pan Chicken Sausage, Sweet Potato and Veggies

Life has become crazy on Thursdays with gymnastics right after school. Literally I pick Ella up from school and hurry to the rec center for gymnastics. She gets a snack in the car on the way there since we cut into dinner time. I have found this quick one pan meal easy to prep before gymnastics, have ready in the fridge (or oven) waiting for Brian to start dinner while we are on our way home. It is a huge hit in our house that everyone will eat. It is affordable, healthy and delicious. This is the chicken sausage we have been using that I get at Aldi's:





One Pan Chicken Sausage sweet Potatoes and Veggies

Ingredients:
1 package Chicken Sausage
4 Sweet Potatoes
10 Brussels Sprouts
1/2 head of Broccoli 
EVOO
Salt
Parsley (optional)

Directions:
1- Preheat oven to 375 degrees. Spray baking sheet with EVOO spray or cooking spray.
2- Peal (if needed) and cut up veggies and potatoes. 
3- In a medium bowl add veggies, EVOO, salt and parsley. Stir until evenly coated.
4- Cut up chicken sausage.
4- Place a single layer of sausage and veggies on baking sheet.
5- Bake for 25-30 minutes. 
6- Serve.
7- Enjoy!!!!

* You can use other veggies of your choice. We have also done with green beans, asparagus, cauliflower, and zucchini.
