Slow Cooker Stuffed Pepper Soup

Fall is finally in the air. One of my goals for this fall and winter is to try new soups that are hearty and flavorful. First up was Stuffed Pepper Soup. I honestly don't know if I have ever had it before, I know I have never made it before. I had sliced peppers in the freezer from over the summer. I thought this would be a great use for them, and it was. This soup turned out delicious. Brian even ate leftovers more than once, that never happens. 




Slow Cooker Stuffed Pepper Soup

Ingredients:
1 lb ground turkey
1 onion diced
14.5 oz can diced tomatoes seasoned 
2 medium peppers of your choice chopped ( I used red, yellow and green) 
3 cups veggie or chicken broth
1 tsp minced garlic
2 oz tomato paste
1/2 tsp basil
1/2 tsp oregano
salt and pepper to taste

Directions: 
1- In a large skillet brown ground turkey. 
2- Add your browned ground turkey to slow cooker. 
3- Add the rest of the ingredients.
4- Cover cook on low for 6-8 hours.
5- Serve.
6- Enjoy!
