Beef Enchiladas
Ingredients:
- 1 pound beef (we used leftover roast, you could also use ground beef)
- 1 onion, diced
- 2 cups shredded cheddar cheese
- 6 tortillas
- 1 can cream enchilada sauce
Directions:
- Preheat oven to 350 degrees. Lightly spray a baking dish with cooking spray. Set aside.
- In a large skillet brown/warm beef over medium heat. Drain fat is needed.
- Stir in chopped onion. Saute 3-5 minutes.
- Add 1 cup of cheese. Stir until melted.
- Pour a little of enchilada sauce on bottom of baking dish.
- Take each tortilla and spoon some of the cheesy beef mixture down the center. Roll up and place seam side down in prepared baking dish.
- Pour rest of enchilada sauce over trolled tortillas. Sprinkle remaining cheese on top.
- Bake 30 - 40 minutes.
- Let sit 5 minutes
- Serve.
