Beef Enchiladas


Beef Enchiladas 


Ingredients:
  • 1 pound beef (we used leftover roast, you could also use ground beef)
  • 1 onion, diced
  • 2 cups shredded cheddar cheese
  • 6 tortillas
  • 1 can cream enchilada sauce


Directions: 
  1. Preheat oven to 350 degrees. Lightly spray a baking dish with cooking spray. Set aside.
  2. In a large skillet brown/warm beef over medium heat. Drain fat is needed. 
  3. Stir in chopped onion. Saute 3-5 minutes.
  4. Add 1 cup of cheese. Stir until melted. 
  5. Pour a little of enchilada sauce on bottom of baking dish.
  6. Take each tortilla and spoon some of the cheesy beef mixture down the center. Roll up and place seam side down in prepared baking dish.
  7. Pour rest of enchilada sauce over trolled tortillas. Sprinkle remaining cheese on top. 
  8. Bake 30 - 40 minutes. 
  9. Let sit 5 minutes
  10. Serve.
  11. Enjoy!!!
