Taco Casserole

Taco Casserole 

  • 16 ounces Frozen Cauliflower Rice
  • 2 Tbsp EVOO
  • 1 lb Ground Turkey
  • 1 Small Bell Pepper - seeded, chopped
  • 1 Small White Onion - chopped
  • 4 Tablespoons Taco Seasoning
  • 1/2 Cup Water
  • 3 Cups Shredded Colby/Jack Cheese
  • 1 Cup plain Greek yogurt
  • 1 can drained black beans (optional)

Optional Toppings:
  • Chopped Lettuce
  • Chopped Tomato
  • Avocado
  • Back Olives

  1. Preheat oven to 350ºF
  2. Pan fry the cauliflower rice in oil over medium/high heat until browned. Transfer to casserole dish and spread in an even layer.
  3. Brown ground turkey with bell pepper and onion over medium/high heat. Drain excess fat if necessary then add taco seasoning, and water. Stir and cook until liquid absorbs. Add black beans if desired. cook another 3-5 minutes. Transfer to casserole dish in an even layer on top of cauliflower rice.
  4. Top with shredded cheese and bake for 10-15 minutes.
  5. Spread Greek Yogurt over the top. Sprinkle with extra shredded cheese,and optional toppings.
  6. Serve
  7. Enjoy

  1. I love the idea of using cauliflower rice. I don't eat regular rice anymore and I usually just put my taco meat on a salad!

    1. My normal is taco salad also but decided to mix it up.
