Easy Pumpkin Coffeecake


  • 1 box of white cake mix
  • 15oz can of pumpkin
  • 2 eggs
  • 1/3 cup water
  • 1 Tbsp pumpkin pie spice
  • 3 Tbsp sugar
  • 3 Tbsp brown sugar
  • 1/2 Tbsp pumpkin spice
  • 4 Tbsp melted butter
  • 1/2 cup flour
  • 1/4 cup chopping nuts optional


  1. Preheat oven to 350 degrees 
  2. Prepare two 8 inch round baking pan with baking spray or EVOO
  3. In a large bowl mix together cake mix, pumpkin, eggs, water and pumpkin pie spice.
  4. Spread half mixture into each baking pan.
  5. In a small bowl, whisk together sugar, brown sugar, and pumpkin spice. 
  6. Stir in butter.
  7. Add flour.
  8. Sprinkle topping over cakes.
  9. Bake for 30-35 minutes until tooth pick inserted comes out clean.
  10. Serve
