Tomato Basil Bisque


  • 2 Tbsp EVOO
  • 2 Tbsp minced garlic
  • 1 large onion diced
  • 1 celery stalk diced
  • 10 small carrots diced
  • 28oz can diced or crushed tomatos
  • 4 cups chicken broth (or vegetable)
  • basil
  • salt pepper to taste
  • 1/2 cup almond milk
  • parmesan cheese optional
  1. In a large pot over medium high heat add EVOO, garlnic, onion, celery and carrots. Cook until tender.
  2. Add tomatoes, broth, basil, and salt/pepper. Bring to a boil. Gently boil for 12-15 minutes.
  3. Remove from heat and carefully blend with a hand immersion blender.
  4. Add almond milk. Cook until warmed. DO NOT BOIL.
  5. Top with Parmesan cheese. 
  6. Serve
