Tomato Basil Bisque
Ingredients:
- 2 Tbsp EVOO
- 2 Tbsp minced garlic
- 1 large onion diced
- 1 celery stalk diced
- 10 small carrots diced
- 28oz can diced or crushed tomatos
- 4 cups chicken broth (or vegetable)
- basil
- salt pepper to taste
- 1/2 cup almond milk
- parmesan cheese optional
- In a large pot over medium high heat add EVOO, garlnic, onion, celery and carrots. Cook until tender.
- Add tomatoes, broth, basil, and salt/pepper. Bring to a boil. Gently boil for 12-15 minutes.
- Remove from heat and carefully blend with a hand immersion blender.
- Add almond milk. Cook until warmed. DO NOT BOIL.
- Top with Parmesan cheese.
- Serve
