Chicken Teriyaki Casserole
Ingredients:
- 1 cup quinoa
- 1/4 cup light soy sauce
- 1/2 cup water
- 1 Tbsp cornstarch
- 4 Tbsp honey
- 1 lb diced chicken breast
- 1 cup sliced carrots
- 1 cup diced broccoli
- 1/2 cup diced cauliflower
- 1 medium pepper sliced (I used orange)
Directions:
- Preheat oven to 375 degrees.
- Cook quinoa per package directions
- To make teriyaki sauce: In a small pan whisk together: soy sauce, water and cornstarch until smooth. Heat over medium heat until warm. Add in honey until dissolved. Bring to a boil. Reduce heat until desired thickness is achieved. Set aside.
- Add quinoa to baking dish.
- In a bowl combine chicken, carrots, broccoli, cauliflower and pepper. Stir in teriyaki sauce.
- Add chicken mixture to top of quinoa.
- Bake for 30 minutes.
- Serve
