 Chicken Teriyaki Casserole 


  • 1 cup quinoa 
  • 1/4 cup light soy sauce
  • 1/2 cup water
  • 1 Tbsp cornstarch
  • 4 Tbsp honey
  • 1 lb diced chicken breast
  • 1 cup sliced carrots
  • 1 cup diced broccoli
  • 1/2 cup diced cauliflower
  • 1 medium pepper sliced (I used orange)


  1. Preheat oven to 375 degrees.
  2. Cook quinoa per package directions
  3. To make teriyaki sauce: In a small pan whisk together: soy sauce, water and cornstarch until smooth. Heat over medium heat until warm. Add in honey until dissolved. Bring to a boil. Reduce heat until desired thickness is achieved. Set aside.
  4. Add quinoa to baking dish.
  5. In a bowl combine chicken, carrots, broccoli, cauliflower and pepper. Stir in teriyaki sauce. 
  6. Add chicken mixture to top of quinoa. 
  7. Bake for 30 minutes. 
  8. Serve
