Yellow Squash Tots
Ingredients:
- 3 small yellow squashes
- 1 egg
- 1/2 cup cheddar cheese, shredded
- 3/4 cup breadcrumbs
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt
- Ground black pepper, to taste
Directions:
- Preheat oven to 400 degrees.
- Spray a baking sheet lightly with EVOO
- Shred squash in a food processor.
- Squeeze out all of the liquid from squash using a cheese cloth. Discard liquid.
- In a large bowl combine squash with rest of ingredients. Mix until sticky and wet.
- Place about 2 Tbsp of mixture in your hand and make tots. Place on baking sheet.
- Bake for 25 minutes or until golden brown.
- Allow to rest for 5 minutes on baking sheet.
- Serve
