 Egg Bites

Ingredients:

• 24 tator tots
• 10 eggs
• 1/4 cup milk
• salt/pepper
• shredded cheese

Directions:

1. Preheat oven to 400 degrees.
2. Place reusable muffin lines in muffin tin, or spray tin lightly with EVOO
3. Place 2 tator tots in bottom of each muffin. Bake tator tots for 10 minutes.
4. Remove from oven and carefully press down tator tots with cup.
5. Lower temperature of oven to 350 degrees.
6. In a large bowl scramble eggs and milk. Stir in salt and pepper.
7. Using a 1/4 cup measuring cup distribute egg mixture evenly into muffin tin, only filling 3/4 way full. 
8. Sprinkle top with cheese.
9. Bake for 20 minutes.
10. Serve
