 Healthy Carrot Cake Baked Oatmeal

Ingredients:

  • 2 cups gluten free oats
  • 1 cup almond or coconut milk
  • 1 cup pineapple
  • 1/4 pure maple syrup
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 tsp ground ginger
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • 1/2 cup chopped pecans (optional)
  • 10 small carrots
  • 1 scoop vanilla protein powder

Directions:

  1. Preheat oven to 350 degrees. Prepare 8x8 baking dish by lightly spraying with EVOO
  2. Add all ingredients into a high power blender. Blend on high for 60 seconds, stopping halfway to scrap sides. 
  3. Pour mixture into baking dish
  4. Bake for 30 minutes or until tooth pick inserted comes out clean.
  5. Let cool a few minutes.
  6. Serve
  7. Enjoy!!!!
