 Fresh Tomato Sauce


  • 7-10 large tomatoes
  • 1/2 lemon, juice only
  • 1 tsp salt
  • 1 Tbsp garlic, minced
  • basil, oregano optional


  1. Bring a large pot of water to a boil.
  2. Prepare a large bowl with ice water and set next to the stove.
  3. Prepare tomatoes but removing stems and cutting an X on bottom of tomato.
  4. In batches, Blanch the tomatoes by placing in boiling water for 45 to 60 seconds until skin starts to wrinkle. Using a slotted spoon remove tomatoes from boiling water and place in ice water.
  5. Using your hands peel the tomatoes. Cut tomatoes into 1/4 and place in food processor.
  6. Blend tomatoes until desired consistency of sauce.
  7. Dump tomatoes from food processor into Dutch oven or large pot.
  8. Repeat with remaining tomatoes.
  9. Simmer tomatoes in Dutch oven or large pot for 30 to 90 minutes. depending on your preferred consistency.
  10. Stir in lemon juice, salt, garlic, and optional additional seasonings.
  11. Used as desired, I am freezing.
