Maple Roasted Acorn Squash
Ingredients:
- acorn squash
- EVOO
- pure maple syrup
- salt/pepper
Directions:
- Preheat oven to 450 degrees. Prepare baking sheet by lightly spraying with EVOO.
- Cut top and bottom off acorn squash. Then slice in half. Scape out seeds with a spoon. Cut into 1/2 inch slices and arrange on baking sheet.
- Lightly spray with EVOO and season with salt and pepper.
- Bake for 15-18 minutes
- Remove from oven. Brush maple syrup over acorn squash. Flip and repeat. Return to oven and bake for an additional 5 minutes.
- Serve
