Black Bean Quinoa Salad
Ingredients:
- 1/2 cup prepared quinoa
- 1 can of black beans
- 1 medium cucumber, diced
- 10 grape tomatoes, diced
- 3 corn on the cobs, corn cut off
- 2 Tbsp EVOO
- salt/pepper
- 2 Tbsp red wine vinegar
Directions:
- Combine all ingredients for the salad in a bowl.
- In a small bowl combine EVOO, salt./pepper, and red wine vinegar.
- Pour dressing over salad. Stir well.
- Refridgerate for at least 2 hours.
- Serve
- Enjoy!!!
