 Chicken Tortilla Soup

Ingredients:

  • 2 boneless skinless chicken breasts
  • 1 cup diced peppers, I used red, green, yellow and orange
  • 1/4 onion, diced
  • 1 can black beans, drained and rinsed
  • 1 can of corn, drained
  • 1 can of diced tomatoes (not drained)
  • 2 cups chicken broth
  • 1 Tbsp garlic, minced
  • 1/2 Tbsp chili powder
  • 1 tsp oregano
  • 1 tsp cumin
  • salt/pepper

Directions:

  1. Line crockpot with slow cooker liner ( you will thank me later)
  2. Add all ingredients into crock pot
  3. Cook on low of 6 to 8 or high for 4 to 5 hours
  4. Remove chicken and shred with two forks
  5. Stir and cook additional 15 minutes
  6. Serve
  7. Enjoy
