 Zuppa Toscana Soup


  • 5 strip bacon, cut into bite sized pieces
  • 1 lb Italian sausage 
  • 1 medium onion, diced
  • 1 Tbsp garlic, minced
  • 4 cups chicken broth
  • 2 cups water
  • 4 large red skin potatoes, diced
  • 1/2 Tbsp Italian seasoning
  • 1 cup heavy whipping cream
  • big handful of spinach (you could also use kale)
  • salt/pepper to taste


  1. In a large stock pot on medium heat, add bacon and sausage. Cook until sausage is no longer pink.
  2. Stir in onions and garlic, cook until onions translucent.
  3. Add chicken broth, water, potatoes, and seasoning. Bring to a boil, then reduce heat to simmer for about 15 minutes, until potatoes are tender.
  4. Stir in cream and spinach.
  5. Serve
