 Lentil Vegetable Soup


  • 1 cup dried green lentils
  • 2 Tbsp EVOO
  • 1/2 onion, diced
  • 2 Tbsp garlic, minced
  • 2 stalk celery, diced
  • 3 carrots, diced
  • a handful of mushrooms, diced
  • 1 head broccoli, diced
  • 15 oz can diced tomatoes
  • 3 medium red potatoes, diced
  • 4 cups veggie broth
  • 1 tsp basil
  • 1 Tbsp Italian seasoning
  • salt/pepper


  1. Rinse lentils. Then soak for a minimum of 30 minutes or as long as overnight. Rinse again.
  2. In a large stock pot, drizzle EVOO.
  3. Saute onion and garlic until translucent.
  4. Add remaining ingredients. Bring to a boil. 
  5. Lower heat and simmer for 30 minutes to an hour.
  6. Serve 
  7. Enjoy!!!

Side Notes:

  • has so much more flavor on the second day.
  • I used whatever vegetables I had on hand that needed used up. You can opt out or add in other veggies to your families liking.
